Handout Gather the whole family together for this delicious pudding
Preparation: 40 minutes.
Cooking: 45 minutes plus one hour to cool
For the base:
125g Oreo or Bourbons biscuits
60g melted butter
2 tbsp cocoa powder
2 drops of black natural food colouring
For the cheesecake batter:
175g dark chocolate
400g cream cheese
150g caster sugar
1 tbsp custard powder
3 large eggs
3 egg yolks
2-3 drops of black food colouring
½ tsp of cocoa powder
For the dark chocolate glaze:
80g dark chocolate
For the white chocolate cream topping:
150g white chocolate
1 tbsp caster sugar
300ml whipping cream
First, line the outside of a spring-sided tin with cling film and a layer of foil. To make the biscuit base, crush the Oreo biscuits and mix them with the melted butter, cocoa powder and food colouring.
Once blended, press the mixture firmly into the base of the lined tin and chill for an hour. In a clean bowl carefully melt the dark chocolate.
In another bowl, beat the cream cheese to soften, then add sugar and custard powder, making sure to mix well.
Slowly beat in the whole eggs and egg yolks, then stir through the Guinness and black colouring.
Finally, sieve the cocoa powder then fold in the melted dark chocolate to the batter.
Fill the cake tin with the mixture, then place into a roasting tin. To cook it you’ll need to do it as a bain-marie. Place the roasting tray on the middle shelf of a preheated oven at 190C/170C fan/gas 5 then fill with water until half full. Cook for 45 minutes until the cheesecake has risen slightly but still has a bit of movement.
Remove from the roasting tray, allow to cool then place in the fridge.
To make the dark chocolate glaze, heat the chocolate and cream and stir in the butter. Allow to cool.
To make the white chocolate topping, melt the chocolate with the sugar and fold in ¼ of the cream.
Now whip the remaining cream and fold through.
To assemble, carefully remove the cheesecake from the tin and place on a serving plate. Pour over dark chocolate glaze and top with a layer of white chocolate cream.
Slice and serve.

1 sprig sugared rosemary
Fill a glass tankard with ice. Add the whiskey and pomegranate juice. Stir to combine. Top with ginger beer. Garnish with sugared rosemary sprigs and pomegranate seeds if desired.
