Apple flapjack bites
(Makes 24)
Rustle up these apple flapjack bites for the Bank Holiday
YOU NEED:

180g butter
125g light soft brown sugar
5 tbsp clear honey
300g oats
1 tsp ground cinnamon
3 red-skinned apples

METHOD: Heat the oven to 180C/fan 160C/gas mark 4. Lightly oil an 18cm x 22cm rectangular cake tin.
Place the butter, sugar and 4 tbsp of the honey in a pan and heat gently until melted.
Tip the oats into a mixing bowl and stir in the cinnamon and melted ingredients, then mix well.
Core and dice one of the apples and mix in.
Press the mixture into the prepared tin, then core and slice the remaining two apples and arrange on top of the mixture, pressing in gently.
Drizzle with remaining honey and bake for 25 minutes.
Allow to cool in the tin for ten minutes, then mark out and divide into 24 squares.
Baked ham and cheese roll-ups
(Makes 12)
For a savoury snack, make ham and cheese roll-ups
YOU NEED:

500g shortcrust pastry
350g ham slices
10 slices cheddar cheese
115g butter, melted
1 tbsp poppy seeds
1½ tbsp yellow deli mustard
1 tbsp onion granules
½ tbsp Worcestershire sauce

METHOD: Preheat oven to 180C/fan 160C/gas mark 4 and grease a baking tray.
Roll out the dough into a 33cm x 45cm rectangle and top with ham and cheese. Starting with the longer edge of the rectangle, roll up the dough tightly.
Once completely rolled, pinch the ends together and adjust so the seam is facing down.
Cut the roll up into 12 equal slices. Evenly place the roll-ups onto the baking tray.

Combine the butter, poppy seeds, mustard, onion and Worcestershire sauce in a small mixing bowl and pour the sauce evenly over the roll ups.
Bake, uncovered, for 25 minutes until lightly browned.
Serve and enjoy.
