Lamb chops with rosemary & beans
Put the spring back in your step with a delicious, energy-boosting meal
2 tbsp olive oil
1 onion, chopped
2 carrots, finely diced
2 cloves garlic, crushed
4 sprigs fresh rosemary, leaves only (washed)
1 tbsp tomato purée
400g can chopped tomatoes
8 lamb chops
400g can haricot beans
METHOD: Heat the olive oil in a large frying pan and add the chopped onion and diced carrots.
Cook for four to five minutes over a gentle heat until softened. Add the garlic and rosemary leaves and continue cooking for a further minute.
Stir in the tomato purée, chopped tomatoes and half a can of water and season to taste.
Simmer for ten to 15 minutes until the carrots are tender and the mixture is thick.
Meanwhile, heat up a large non-stick frying pan then add the lamb chops and fry until they are cooked through.
Stir the haricot beans into the sauce and divide between serving bowls.
Top with the chops and serve straight away.

Pork medallion chilli ramen
Try out pork chilli ramen as a quick and easy meal that resembles your favourite takeaway
2 pork loin medallions
2 squirts of spray oil
1 tbsp teriyaki sauce
125g bean sprouts
1 litre vegetable stock
2 stock cube
2½cm root ginger, peeled and cut into matchsticks
2 tsps chilli sauce
125g shitake mushrooms
1 carrot, thinly slice
200g pak cho
90g rice noodles
2 spring onions
3 slices red chilli, sliced
3 sprigs fresh coriander
2 lime wedges
METHOD: Preheat the oven to 180C/350F/gas mark 4. Place the medallions on a board between two sheets of clingfilm. Using the base of a small saucepan or rolling pin, bash them all over until they are 1cm thick.
Place the bean sprouts in a sieve and pour boiling water over them, refresh under cold water and leave to one side.
Add the stock to a large saucepan, with the chilli sauce, ginger and garlic, bring to the boil and simmer for five minutes. Meanwhile, heat a non-stick ovenproof pan for a couple of minutes until hot.
Spray with a little oil, add the pork medallions to the pan and cook for three minutes on one side.
Turn the medallions over, brush with the teriyaki sauce and place the pan in the oven to cook for a further six to eight minutes or until the juices run clear.
Add the mushrooms, greens, carrots and noodles to the chilli broth and simmer for four to five minutes, until the noodles and vegetables are tender.
Slice the pork steaks thinly.
